Method
1. Put salt, Sichuan peppercorn, black pepper, star anise, bay leaves and cassia in a large microwave safe container, place inside the oven at level 0 and cook with microwave 600W for 10 to 12 minutes, stir once or twice during cooking
2. Wash quail eggs and pat dry with paper towels, line the glass pan with aluminium foil, place a layer of salt on it, lay down the quail eggs, and then add the rest the salt to cover the eggs, wrap with aluminium foil
3. Place the glass pan inside the oven at level 1 and bake with hot air gill 190℃ + steam 1 for 25 to 28 minutes
