Method
Butter Filling Method
1. Put unsalted butter into the kitchen machine (with paddle), beat at speed 3 (medium speed) until soft, add all the flour and mix well.
2. Warp it in plastic wrap and form a square, then chilling for 2 hours.
Dough Method
3. Put all the dough ingredient (except unsalted butter) into the kitchen machine (with hook) knead at speed 3 (medium speed) until all ingredients are mix well. Add unsalted butter and mix until the dough become smooth and elastic.
4. Round the dough and warp it in plastic wrap, then chilling for 2 hours.
Lamination
5. On a lightly floured surface, use a knife to mark a cross on top of the dough, roll out, wrap the butter filling in the dough. Press lightly and rolling out into rectangular shape. Start laminating the dough by rolling out the dough and folding in thirds
6. Turn the dough 90 degrees, press lightly and rolling out into rectangular shape, folding in fourths. Repeat step( 6) two more times until you reach 3 *4*4*4 lamination in total. (Tips: please make sure the texture
7. Rolling out the dough as 0.5 cm thick * 42cm (L) * 20cm (w), cut into small rectangular size 8 cm (L) * 3cm (W). Put on baking tray (with baking paper).
Combination
8. Mix icing ingredients together. Bruch on top of the puff pastry and sprinkle with almond flakes. For Series 8 ovens with assist program: Select Assist > Cake, bread > Pastry.
Put into the 2nd level of the oven under the PERFECTBAKE function automatically until golden brown. Transfer the almond puff pastry on the cooling rack, served.
