INGREDIENTS:
10 frozen raspberries | 100g raw cacao powder | GARNISH: |
200g pitted Medjool dates | 1/2 tsp baking powder | Little raspberries |
180ml hot water | 45g honey | Little mint leaves |
150g almond flour | Little sea salt |
PREPARATION STEPS:
1. Roughly chop the pitted dates then soak with hot water for 10 minutes. In Bosch food processor, blend the dates together with some hot water until you have a smooth paste.
2. Add the almond flour, cacao powder, baking powder, honey and sea salt in the food processor and blend until combined to form a smooth batter.
3. Transfer the batter to a baking dish lined with parchment paper. Spread evenly and top with frozen raspberries.
4. Bake in a 170℃ oven for 20-25 minutes.
5. Remove from the oven. Let cool in room temperature then chill in fridge before slicing. Decorate with some fresh raspberries and mint leaves. Serve.
