Ingredients
30g peach gum (dried) | 800ml milk |
8 dried longan (soaked) | 150ml coconut milk |
8 red dates (unseeded, soaked) | Some rock sugar |
Methods
1. Rinse and soak peach gum with water overnight till it expands and soft. Rinse it a few times with a sieve to remove the impurities and drain well. Set aside.
2. Bring milk and coconut milk to blend and mix well. Heat it in a small pot and stir in some rock sugar till dissolved.
3. Put peach gum, dried longan and red dates into a stewing pot, and pour in the milk until 80% full. Cover the pot with a lid.
4. Simmer in a 100˚C steam oven for about 45 minutes. Serve.
