Ingredients (4 servings)

Cookware: microwave safe container, oven proof dish, glass pan Nutrition facts per serving:
138.8 kcal, 9.1g carbohydrate, 8.9g fat, 6.5g protein
  • 300g eggplant (approx. 4)
  • Some black pepper
  • 12g olive oil
  • 2 slices bacon
  • 4 basil leaves (cut in half)
  • 40g buffalo cheese

Method

1. Soak sliced eggplant in salt water to remove astringency then drain dry, sprinkle salt, black pepper and olive oil, arrange eggplant into a microwave safe container and place inside the oven at level 0, cook with microwave 600W for 8 minutes

2. Put 1/3 eggplants on the baking pan, sprinkle half of the bacon and basil. Apply second layer of eggplants, bacon, basil and the rest of the eggplants, pour tomato sauce on top then sprinkle with bacon and cheese. Put the container on the glass pan and place inside the oven at level 2, bake with hot air 200℃ + microwave 90W for 15 minutes, then bake with grill 3 for 2 minutes
