Method
1. Wash mackerel and pat dry with paper towels, cut green onion cut long segment, slice ginger, marinate mackerel with salt, oil (10g), ginger, Shaoxing wine, and white pepper for 30 minutes
2. Fill the water tank with water, put mackerel pieces on the steam container then on the glass pan, place inside the oven at level 3, cook with automatic programme P12 (select P13 for frozen fillet), set the weight as 0.5kg, set aside when the programmme ended
3. Combine soy sauce, sugar and dark soy sauce, mix well to make sauce
4. Put shallot, garlic and the rest of the oil in a large microwave safe container, place inside the oven at level 0, cook with microwave 1000W for 1 minute 30 seconds, add fish and red chili and continue to cook for 2 minutes 30 seconds, pour sauce over and cook with microwave 1000W for another 2 minutes, stir in cornstarch slurry, cook with microwave 600W for 5 minutes
5. Cook until sauce thicken, garnish with green onion
6. Enjoy
