Method
1. Thin slice sole fillet and marinate with Shaoxing wine, white pepper, salt and corn starch for half an hour
2. Put washed bean sprouts in a large bowl and fill enough water to cover it, place inside the oven at level 0 and cook with microwave 1000W for 10 to 12 minutes, drain and put into a large bowl
3. Put vegetable oil, Sichuan peppercorn and dried chili in another microwave safe container and place inside the oven at level 0 and cook with microwave 600W for 5 to 6 minutes, pour half into another container and set aside. Add bean sauce, ginger, garlic, star anise and cassia into the remaining chili oil mixture and continue to cook 1 minute 30 seconds to 2 minutes
4. Stir the fish in and add hot water, place inside the oven at level 0 and cook with microwave 1000W for 10 to 12 minutes, transfer to the bowl with the bean sprouts. Heat the other half of the chili oil with microwave 1000W for 2 minutes until boiled, pour over the fish
5. Enjoy
