Ingredients
4 pork jowl meat |
Marinade
1 tbsp shaoxing wine | 1 tbsp red curry paste |
4 kaffir lime leaves | 1/2 tbsp soy sauce |
1 tbsp fish sauce | Little crushed black pepper |
Sauce
1 shallot (minced) | 2 tbsp sugar |
2 lime (juiced and zested) | 1 red cluster pepper |
2 tbsp fish sauce | 1 tbsp Thai parsley (finely chopped) |
3 tbsp water | 2 tsp fried glutinous rice |
Methods
1. Marinate pork jowl meat for about 30 minutes, put into a preheated 180°C oven (grill mode) to cook for about 20 minutes until golden brown. Remove and briefly let cool. Cut the pork diagonally into slices. Set aside.
2. Mix the ingredients for sauce, serve with the meat.
